Goats have always been bred throughout the Alps. Milk and cheese were traditionally processed at home and the cheese was consumed in the family. Since the 1930s, the quantities of milk exceeded the family needs, so the processing of goat’s milk began in a dairy in the village. After a dark period, animals have been reintroduced for about ten years and goat cheese production has resumed. Caprino Trentino is a cheese of ancient dairy tradition and is recommended for the near absence of cholesterol or for those who are lactose intolerant. Excellent to taste in combination with acacia honey or fruit compotes.
In Alta Val di Non this delicate goat cheese is produced, lightly seasoned, with a compact, white color, with sparse holes. Delicate, slightly spicy, typical scent, rich and stimulating.
