Trentino malga cheese – slightly seasoned in Andalo – limited edition
It is the cheese that each dairy produces all year round in the area surrounding the Lagorai Massif in the Autonomous Province of Trento: Alta Val di Cembra, Borgo Valsugana, Pinè, Primiero, Val di Fassa, Val di Fiemme, Valle dei Mocheni, Trentino Alto.
The shapes are traditional, cylindrical, about 10 – 11 cm high with a diameter of 30 – 35 cm. Each shape weighs about 7 or 8 kg. The paste has a straw-yellow color, the present holes vary depending on the time, the dairy and the location: texture more or less thick, large or medium.
This cheese has a particular taste, very appetizing and, with seasoning, it becomes spicy.
Dal Marcante presents it with a slight seasoning made in Andalo. Delicate and sweet, but not lacking in its own character, generally also liked by juniors.
The cheese on the image refers to a piece from about 450 g to about 500 g.
