Speck or lightly smoked raw ham is a typical product of Trentino and its history is lost in the mists of time. The dal Marcante one contains only juniper, secret recipe of mountain aromatic herbs and salt, to which is added the delicate smoking.
Paolo wanted to recover this tradition: he still selects the meats that he buys directly over 6 months before, he arranges his speck with the support of a couple of reliable high quality local artisans and follows the production process directly.
After about 8 months of processing, a dry, soft, sweet speck comes out, where the light smoking gives a special aroma that never covers the delicate flavor of the meat.
Sliced, in pieces or in slices, it is always a wonderful companion, especially if enjoyed together with the typical Valchiese cheese, the ideal cheese for tasty snacks and sandwiches.
