The Teroldego reserve “Sangue di Drago” is obtained exclusively from the historic Maso Donati vineyard, located in the heart of the Rotaliana area in Trentino.
Grape variety: 100% native Teroldego. The origin of this native red grape, which has always been cultivated in the restricted area of the Piana Rotaliana, is traced back, in the popular tradition, to the legend of the Dragon of Castel Firmian that overlooks the Borgo.
The contained yields of grapes per hectare, obtained by systematically thinning the bunches, give more resistant and rich peel and pulp allowing an excellent phenolic maturation. Fermentation at a controlled temperature takes place in special steel vats followed by aging in French oak barrels for a minimum of 16/18 months. Rest in the bottle before leaving in September.
Suitable with strong dishes based on red and roast meats, game, red meats with sauces, mature seasoned hard cheeses. Exceptional alone as a meditation wine
Color: intense, black, rich, almost impenetrable
Bouquet: the hints of wild fruit (raspberry, strawberry, blueberry) on the nose, typical of young Teroldego, evolve into morecomplex scents of blackberry and dried fruit, immersed in a sweet spicy persuasiveness.
Taste: plum, dark chocolate, clear fruit on the palate, pulpy structure with ripe, soft, sweet tannins. Warm and soft, very balanced, with an important structure. The smell of the woods never overpowers the fruit of the Teroldego. It can also be preserved for many years evolving in a particularly interesting way for smell and palate.
